Molly's Sweet Treat of the Month

It’s no surprise that Molly Griffin knows her way around the kitchen. Working with her dad and Head Chef Andrew in the Tart kitchen has given her a passion for creating sweet surprises and savoury specialities.

Each month Molly will be treating Tart customers to a Sweet Treat of the Month, showcasing her creativity and flair.

May 2012: Rhubarb, orange and custard cake

Spring is such a great time for seasonal fresh produce which is why rhubarb features as the main ingredient in this months sweet treat. Molly’s dad and head chef Andrew, has an allotment where an abundance of rhubarb has grown in the last few weeks.

The main ingredient may not look as pink as we see it in the shops. As Molly explains, “home grown rhubarb appears more of a green colour as opposed to when it’s grown in a forced environment”.

“Once in the kitchen, we roast the rhubarb with sugar and orange zest to help it keep its shape” Molly describes ,“then we add a very soft butter and the rest of the ingredients are added at the same time”.

Everyone knows that the best thing that goes with rhubarb is custard and it tastes even better when it’s made from scratch. “The custard has been folded into the sponge cake to enrich the flavour” explains Molly.

If you fancy a hot drink to go with your slice, Molly recommends a pot of Earl Grey to compliment these traditional flavours.
